We surely started the year with some low temperatures didn’t we? Last year went by so fast and here we are almost to mid-January.
It’s been a very busy year at the Patrick Springs Pentecostal Holiness Church Food Ministry. In 2017, we signed in 9,043 people and counting the members in the family household we helped 29,464 people. Thank the Lord, we had the food. Now some of the deer hunters are donating meat to the food ministry. Thank you!
Thanks to Glenn Jackson for the kind letter. I’m always happy to hear from the readers. When I worked at Poor Farmer’s Farm 24 years, I always enjoyed meeting the people from all over and have a lot of good memories from there.
Neighbors Larry and Teresa Martin took me with them when they visited Danny Hundley up on Foley Road. By the time we got there, I thought we were on top of the world. It was beautiful. Then we came down a different way. The creeks were all frozen over and that was pretty also. The ride was kind of “bouncy” but fun. Please put Danny on your prayer list. He lost his wife, Carol, recently.
Now it’s time to get serious and do some healthy eating. I think it’s good we are going on the Daniel Fast. It’s not a bad fast because we can have fruits and vegetables. Actually, I felt better when we were on it last year.
Charles Vivier called and told me a hint about drying plastic containers and Tupperware. If you have an oven with a light you can use it to dry pots, pans and plastic containers. Put in the oven and the light will dry them. When he does the dishes, that’s the way he dries Tupperware. Caution: don’t put anything over the oven door so you can see inside. (Make sure to take the plastic dishes out of the oven before turning it on.)

I love talking to “Miss Claudine” Wood almost every day. In the winter, both of us are glad to see sunny days and not much wind. The cold spell we had recently ended with a perfect sunny day, no winds at all, and temperatures up. It was a perfect day for me to do my soup route.
Speaking of soup, the soup kitchen did a great job with the taco soup. Thanks to Doris Craighead for making the desserts. The people loved them and it brought smiles to their faces.
Baking hint: for a quick, low-fat crunch topping, sprinkle the topping with Grape Nuts cereal before baking.
MACARONI
HAMBURGER DISH
1 1/2 cups macaroni, cooked and drained
1 lb. hamburger
Cracker crumbs
1 can tomato soup
1 tsp. salt
1 small onion, sliced
3/4 cup water
1 tsp. pepper
Cook macaroni until tender. Brown hamburger with onion, salt, and pepper until done. Drain. Mix macaroni and hamburger in casserole dish. Put cracker crumbs on top. Mix tomato soup and water and pour over cracker crumbs. Bake in preheated oven for one hour.
