We were beginning to need rain in our area and it was really hot and muggy. Then we had a biggest thunderstorm I had ever seen in years.
Lightning was going in all directions and it lasted for at least two hours, and we lost power for a few hours. Then we enjoyed some cooler weather. Thanks to neighbors Brian Ratliff for checking on me after the storm. Everything really did perk up and the flowers and plants looked great.
Linda Roberts and I really enjoyed the ice cream supper at Concord United Methodist Church Saturday evening. Mike Hall sang a lot of beautiful songs. Ice cream was delicious and I got my favorite, orange pineapple and black cherry. Then Linda bought me two apple pies. It was nice to see Linda Hylton and Carolyn there from Meadows of Dan and get to talk to them.
Please put Mr. Ronnie Mabe on your prayer list. He is facing heart surgery.
On Tuesday I came from church and discovered a package on the front porch. When I opened it, I was really excited to see an Amish book. Thanks to Beverly and Mark Woody and Blue. I was so excited. Every fall, she always gives me a bag of turnip greens.
When I went to Elizabeth’s Pizza for my weekly visit, I had a nice surprise. Trish Villarreal came in and ate with me. Then another surprise when a couple came over to speak to me and asked, “Aren’t you the lady that does the Party Line for the Enterprise?” They had moved here from up north. He reads the Party Line and she likes the recipes. It was a pleasure to see them as I always enjoy seeing the readers of the Enterprise and I’ve met quite a few from other states.
The men’s ministry cooked up a good supper on Wednesday. I really do appreciate them for all the work they do; the hamburgers and french fries were good!
I always enjoy neighbor Connie Greer coming by. She always has Harlie the dog(who acts like a person). Thanks for all the photos and the cake. I’ll have some new photos for the Party Line.
FOOD FOR THOUGHT: Psalms 98:1 says “O sing to the Lord a new song for He has done marvelous things.” We can see miracles all around us, if we slow down and pay attention, we will spot them.
RECIPES: COLD PEACH SOUFFLE FROM THE TOPS COOKBOOK:
1 – 12 oz pkg frozen peaches
1 – tbs unflavored gelatin
4 – eggs separated
1/4- cup water
1-tbs lemon juice
dash of salt
1/4 tsp almond extract
1-tbs liquid artificial sweetener
1- envelope whipped topping
Drain peach liquid into the top of the double boiler, Sieve peaches and set aside. Add gelatin to peach liquid and cook along with the egg yolks and water for 5 minutes. Remove from heat and stir in lemon juice, salt and almond extract, add sweetener and the peaches. Beat egg whites until stiff. Fold into gelatin mixture along with the whipped topping mix. Pour into 1 1/2 qt soufflé dish. Chill at least 4 hours–six servings at 166 calories per serving.
DIET HINT: Bacon cooked crisp and patted between paper towels has only 25 calories. Bacon along with the grease has 50 calories.
