The Food Ministry at church is well supplied and truly blessed. There should be a lot of good pickling cucumbers made as we are giving out boxes of them. Lots of strawberries, too.

Church was held in the parking lot again, and the weather was nice. “Sam,” the church dog, came and stayed with me a while, got his treats, and then went on his way greeting people. I spent the rest of the day after church listening to Pastor Tommy Sheppard, while I was resting.

Thanks go out to Pastor Marion for taking a special gentleman a box of food. I do appreciate it so much because I wanted him to have some food. Also, I am praying for him.

I was sad to hear about the death of Mr. Lloyd Marshall (Vesta area). My love and heartfelt sympathy goes out to the family. You are in my thoughts and prayers.

I’m so thankful for all the good reading material folks have given me lately, and I am so happy I can share some with my neighbors.

Fourth of July was so different this year. I usually sit on my porch and listen. There use to be a big celebration on the Mountain with the Ballard Band. So many good memories. They even had a big square dance at night and fireworks. We went home at midnight.

Congratulations to Wanda Quesenberry on her good fortune in winning the lottery. She is a special, kind and compassionate person.

I’m sending a hello out to a special young man up Meadows of Dan, whose name is Liam.

We got a lot of nice cantaloupes at the church Food Ministry. I could take a few to my neighbors. I am always thankful that I can deliver some to people, especially a special little girl who loves her fruits and veggies.

Mary Ann called from D.C. and we had a long conversation. It’s always good to hear what is going on up there. Then I can tell her what’s going on here because she knows many people here.

Food for Thought- The wonders of God’s creation are amazing. We appreciate all of the colors, sunsets and star-lit nights. May we never take any part of this creation for granted. Genesis 1:31 says: God saw everything He had made, and it was good. Let’s take time to enjoy these things.

 

Zucchini Appetizers

1 cup Bisquick

4 eggs, beaten

1 cup olive oil

1/3 finely chopped onion

2 tbsp. chopped parsley

1 clove finely chopped garlic

1/2 tsp salt

1/2 tsp oregano

1/2 cup parmesan cheese grated

3 cups zucchini thinly sliced

Pepper to taste

In large bowl combine, Bisquick, eggs, onion, garlic, parsley, salt and pepper. Mix well. Add oregano, zucchini and cheese. Spread into a greased pan, bake at 350 for 25 minutes, until golden brown. Cut into bite size pieces and enjoy.
